This is a wonderful breakfast or brunch souffle! Its easy to make and my family loves it!
Cheesy Grits Souffle
Ingredients:
Grits
Water
Butter
Green Onions
Garlic Cloves
Red Pepper
Salt
Fresh Ground Pepper
Sharp Cheddar Cheese
Bacon
Eggs
1 cup grits, ( I use Nora Mills Grits, www.noramill.com )
4 cups water
Bring the water to a boil in a saucepan. Stir in grits and turn heat down to low. Cover, stirring occasionally for 20 minutes. Remove from heat and set pan in a sink with a small amount of cool water in it, cool, stirring to prevent a skin from forming.
4 green onions
2 cloves garlic
4 Tablespoons butter
Chop onions and mince garlic. Melt butter in a saute pan and add onions and garlic, saute 3 to 4 minutes, just till softened. Set aside.
1/4 tsp crushed red pepper
1/2 tsp salt
1/2 tsp fresh ground pepper
Measure red pepper, salt, and pepper into a small bowl and set aside.
1 1/2 cups sharp cheddar cheese
Grate cheese coarsely and set aside.
4 slices of bacon
Cut bacon into small pieces with scissors and fry in a small skillet. Drain and set aside.
Take Grits pan out of water and fold in the onion mixture and the spices, cheese and bacon. Set aside.
Preheat your oven to 350 degrees.
Prepare a heavy gratin dish by rubbing down with butter and set aside. (I use an oval white porcelain Apilco casserole dish that measures approximately 9X13).
4 eggs (you will only use the whites)
Separate egg whites from the yolks. Measure out 1/2 cup of whites. Put the egg whites into your electric mixer bowl and add a pinch of salt, using the wire whip beat till egg whites are stiff. Spoon 1/3 of whites into the grit mixture and stir, then gradually, gently fold in the remainder of the egg whites.
Transfer your mixture into your baking dish and bake at 350 for 30 to 40 min. You can tell when its ready by sticking a sharp thin knife into the edge and when it comes out clean its finished. Serve immediately.

EASY PORK CHOPS
This is an easy way to fix pork chops with a delicious tangy flavor!
Easy Pork Chops
6 center cut pork chops, cut 3/4 inch thick
2 Tablespoons olive oil
2 Tablespoons brown sugar
1 Tablespoon dry mustard
4 teaspoon minced onion
2 Tablespoons apple cider vinegar
1 1/2 teaspoon salt
2 teaspoons Worcestershire sauce
1/2 cup ketchup
1/3 cup water
In a large frying pan, brown meat in olive oil. Pour off drippings. Combine salt, brown sugar, mustard, onion, vinegar, Worcestershire sauce, ketchup and water in a small bowl. Pour mixture over pork chops in frying pan. Cover tightly and simmer at least 45 minutes. Six servings

STRAW HATS
This is a great fun meal to have with company or just your own family! Adults and kids seem to love it!
1 lb. hamburger
1 15 oz. can tomato sauce
1 16 oz. can dark red kidney beans (do not drain juice off)
1 1.25 oz. package taco seasoning mix
1/2 tsp. salt & 1/2 tsp. pepper
Brown hamburger in a large skillet, add taco seasoning, salt and pepper. Stir in tomato sauce, kidney beans. Simmer on for 15 minutes.
1 head lettuce (chopped into bite size pieces)
1 medium onion (chopped)
2 large tomato's diced
1 lb. cheddar cheese (shredded)
1 can black olives pitted and sliced
sour cream
2 limes (sliced into 1/8 sections)
1 bag of Fritos corn chips
Texas Pete hot sauce
Sweet pickle relish
ketchup
Place each of these into a serving bowl and dish up the meat sauce into a serving dish. Start by passing the Fritos (we crush the chips on our plate before adding anything else) and then the meat sauce followed by the lettuce and on down the list. You just stack it up on your plate and then enjoy the greatest tasting meal ever! Be careful as this gets big, fast, on your plate!!! Sometimes I also chop avocado and also serve shredded coconut with this. Just let your imagination run wild!

HOMEMADE VEGETABLE SOUP
Today is a foggy damp cool day here in the North East Ga mountains. And I find myself craving a bowl of homemade vegetable soup! So I decided to share the recipe while I'm making it.
Homemade Vegetable Soup
1 qt of green beans
1 16 oz bag of frozen peas
1 16 oz bag frozen lima beans
1 16 oz bag frozen corn
2 cups sliced carrots
2 cups diced pealed potatoes
1/2 cup chopped onion
8 oz beef broth
1 qt tomato juice (I use home canned)
1/2 to 1 qt water (depending on how thick you like it)
1 15 oz can tomato sauce
1 tablespoon Summer Savory spice
1 teaspoon salt
1 teaspoon pepper
1 tablespoon sugar
1 medium size chuck roast
I usually bake my roast in the oven (using the method described for my pot roast recipe) the day before I make this, and then use a fork to separate it into bite sized pieces. (You can cube the roast and put it in raw). Use a large soup pot and put everything into it and bring to a boil, then turn down and simmer all day. This makes a large batch. I put it in Ziploc freezer containers and freeze it up. Makes wonderful gifts for sick friends!

FRESH STRAWBERRY PIE
This is my favorite fresh strawberry pie recipe! You can use any fresh fruit my daughter-in-law makes it with fresh peaches. Yummy!
1 1/2 qt strawberries
2 cup water
1 3/4 cup sugar
5 tablespoons cornstarch
3 oz box strawberry jello
Cool Whip
Cook sugar, water, cornstarch until thickened ( I stir the cornstarch into about 1/2 cup of the water and then add to the rest, so you don't have any lumps). Add the box of dry jello and stir until well blended. Pour over washed and dried, halved strawberries placed in baked pie shells. (I use the pie crust that is in my recipe blog, just roll out and place in to pie pan and crimp edges and prick bottom and sides with a fork and bake at 375 degrees for about 10 minutes).
Cool in refrigerator and just before serving spread cool whip over the top.
This recipe makes 2 pies.

ICED TEA
A great way to make iced tea. I have made my iced tea like this for the past 36 years, it is delicious!
Iced Tea
3 family sized Lipton tea bags
5 whole cloves
Place tea bags and cloves in a container , pour 1 qt. boiling water over them.
1 1/2 cups sugar
Squeeze tea bags and then put sugar into a 1 gallon pitcher and then pour hot tea mixture over the sugar. Stir well and then add cold water to fill container. Stir again and chill. (leave the whole cloves in the pitcher as the flavor just gets better over time). Pour over ice in a nice tall glass and enjoy!

LAZY DAISY CAKE
An easy to make cake with common (in the kitchen) ingredients. Great snack time cake! This is my husbands favorite cake!
Lazy Daisy Cake
2 well beaten eggs
1 cup sugar
1 cup flour
1 teaspoon baking powder
1 teaspoon vanilla
1/2 cup boiled milk
1 tablespoon butter
To well beaten eggs, add sugar slowly,(using your mixer). Then add flour, baking powder and vanilla and beat for 2 minutes. Add boiled milk into which the butter has been melted. Mix and pour into a 8 X 8 inch greased square glass baking pan. Bake at 350 degrees for 25 minutes.
Remove from oven and poke holes all over the top of the cake with a toothpick.
5 tablespoons brown sugar
3 tablespoons butter
2 tablespoons milk
Bring the above ingredients to a boil. Pour topping over the cake as soon as it is taken from the oven. Let cool and enjoy!
