This is the salad that my Mom always served, and it still is a favorite of ours.


1 Head Bibb or Boston lettuce (turn into small pieces)
1 carrot, grated
1 very small onion, chopped
10 cherry tomatoes (cut into quarters)
4 hard boiled eggs (chopped)

Just before serving mix all the above in a bowl.


3/4 cup mayonnaise
1/4 cup apple cider vinegar
1/2 cup sugar
1/4 to 1/2 cup half and half (just to make it the right thickness to be able to pour the dressing, be careful to not get it to thin).
1/2 tsp. salt
1/4 tsp. pepper

Mix the above ingredients and pour the desired amount over the salad, stir and serve. If you have any left it can be stored in the refrigerator for several weeks.
