HOMEMADE VEGETABLE SOUP


Today is a foggy damp cool day here in the North East Ga mountains. And I find myself craving a bowl of homemade vegetable soup! So I decided to share the recipe while I'm making it.

Homemade Vegetable Soup

1 qt of green beans
1 16 oz bag of frozen peas
1 16 oz bag frozen lima beans
1 16 oz bag frozen corn
2 cups sliced carrots
2 cups diced pealed potatoes
1/2 cup chopped onion
8 oz beef broth
1 qt tomato juice (I use home canned)
1/2 to 1 qt water (depending on how thick you like it)
1 15 oz can tomato sauce
1 tablespoon Summer Savory spice
1 teaspoon salt
1 teaspoon pepper
1 tablespoon sugar
1 medium size chuck roast

I usually bake my roast in the oven (using the method described for my pot roast recipe) the day before I make this, and then use a fork to separate it into bite sized pieces. (You can cube the roast and put it in raw). Use a large soup pot and put everything into it and bring to a boil, then turn down and simmer all day. This makes a large batch. I put it in Ziploc freezer containers and freeze it up. Makes wonderful gifts for sick friends!

FRESH STRAWBERRY PIE

This is my favorite fresh strawberry pie recipe! You can use any fresh fruit my daughter-in-law makes it with fresh peaches. Yummy!

1 1/2 qt strawberries
2 cup water
1 3/4 cup sugar
5 tablespoons cornstarch
3 oz box strawberry jello
Cool Whip

Cook sugar, water, cornstarch until thickened ( I stir the cornstarch into about 1/2 cup of the water and then add to the rest, so you don't have any lumps). Add the box of dry jello and stir until well blended. Pour over washed and dried, halved strawberries placed in baked pie shells. (I use the pie crust that is in my recipe blog, just roll out and place in to pie pan and crimp edges and prick bottom and sides with a fork and bake at 375 degrees for about 10 minutes).
Cool in refrigerator and just before serving spread cool whip over the top.
This recipe makes 2 pies.
